It has been a while since I have blogged- so I thought I would share one of the most easiest, delicious and nutritious meals. I make this pesto at least twice a week as this is one of Jacob's favourite meals (and it only takes ten minutes to make! ) So here it is Kale, Spinach and Macadamia Pesto Pasta...
Duration: 10 minutes
In a large pot bring water to the boil, break pasta into smaller pieces, and cook until al dente.
Whilst pasta is cooking prepare the pesto by adding kale, spinach, macadamias, garlic, olive oil and parmesan into a food processor and blend.
Whilst you are waiting for the pasta to cook using a cutter cut circle out of a wholemeal wrap.
Using a knife cut a slice out of the end of the cucumber- this will be used for the iris, place in the middle of the wholemeal wrap eye.
Using a pen/texta lid cut a circle out of the black pancake. Place in the middle of the cucumber, this will be the pupil. To add an extra element of shine to the eye add a small circle of wholemeal wrap on top left of each pupil.
Cut a curved triangular shape (refer to image) out of the black pancake. Using scissors cut 4 small triangles out of the wholemeal wrap these will be used for the teeth. Place the teeth on the bottom of the mouth.
Cut two further curved triangles for the horns.
Using tongs place some pasta in the middle of the plate, create a circle shape. Squeeze some lemon juice on top of the pasta.
Cut a string bean in half and place on either side to create Mike’s arms. Place a further two pieces below Mike to create his legs.
Place the eye on top of the pasta. Cut two thin strips of remaining cucumber skin and on either side of the iris to create Mikes eyelids. Place the mouth below the eye.
