Sully Rice Paper Rolls

INGREDIENTS (6 serves)
400g free range chicken thigh
1 tbsp honey 
1 tsp soy sauce 
1 carrot 
1 cup purple cabbage 
1 cucumber 
1 radish 
1 cup of vermicelli noodles 
12 mint leaves 
6 rice paper sheets
Pinch of baking soda
2 quinoa seeds 
1 tsp coconut oil 
1 black pancake
UNTENSILS 
Scissors 
knife 
skewer
penlid 
Mini circle cutter

RECIPE 
1. In a small bowl mix the honey and soy sauce. Cut the chicken thighs into strips and marinate in the honey soy. Leave for 15 minutes
2. In  a small pot place a piece of purple cabbage and allow to boil- once boiled add a pinch of baking soda to the water- this will make the water blue. 
3. Allow the cabbage to cook until it starts to appear blue around the edges. Remove and allow to cool 
4. Place the vermicelli noodles into the blue water and cook. Remove and strain once cooked. 
5. Cut the the carrot, cucumber and purple cabbage into slices. Place on a seperate plate. 
6. Place coconut oil onto pan and cook the marinated chicken. 

HOW TO MAKE CREATION

1. Whilst the noodles are cooking you can prepare the facial features. Using a knife cut a slice of the radish. Cut two circles out of the radish using a pen lid- these will be used as the eyes.  Cut two triangles out of the remaining radish slice for the horns​

2.  Using the mini circle cutter cut two circles out of the purple cabbage- make sure that you are cutting out of the blue coloured sections- these will be used for the iris

3. Using scissors cut two rectangles out of the blue section of the purple cabbage- these will be used for the eyebrows
Cut a small triangle to create the nose

4. Using the mini circle cutter cut two circles out of the black pancake - these will be used for the pupils 
Using scissors cut a curved line out of the black pancake to create the mouth

4. Place the iris on to the eyes (radish circles), place the pupils (black pancake) onto the Iris. 
Wet the tip of your knife and press onto quinoa seeds (the water will allow the quinoa to stick onto the knife) Using a skewer to guide the seed place on the top left side of each pupil. This will create an element of shine in the eye.

5.  Place the rice paper sheet into a bowl of water for approximately 5 seconds . The sheet should still remain a little hard when removing - this will soften when plating. 
Place the noodles in the centre of the rice paper sheet
Place the chicken and vegetables on top. 
Fold the sides of the sheet inwards followed  by the top and bottom to create an oval shaped roll

6. Turn the roll around.

7. Place the eyes on to the face. Place the eyebrows above the eyes. Place the nose below the eyes. Place the mouth below the nose. 
Cut a few small triangles out of the radish for the teeth and place onto mouth. 
Place horns on top of the head.
